Cuisine

At Takotsubo, ordering the "omakase (chef’s choice)" course will treat you to around 20 or so small dishes, each offering diverse flavors, seasonings, and textures, ensuring a consistently delightful dining experience from start to finish. Dishes like simmered and grilled fish are presented with the fish head intact, and the sashimi platter features a variety of fish served in various styles. One of the most popular menu items at Takotsubo is the small sardines. For grilled sardines, large ones are selected, while small, fatty sardines are used for sashimi. Only sardines chosen by the market's wholesalers are procured. The sardines for sashimi are meticulously filleted by hand, washed thoroughly with running water, resulting in a sashimi with a mouth-melting texture and a controlled fishy flavor.

Specialty

The signature dish of Takotsubo, known as "Hitsumushi," features two variations: conger eel (anago) and eel (unagi). The eel used for this dish is sourced from Shizuoka and is well-known for its excellent fat content. It's expertly grilled to a delightful crispiness using a secret sauce that has been continuously perfected over 60 years. The eel is finely chopped and served atop rice, creating a culinary masterpiece. On the other hand, the eel grilled with high-intensity binchotan charcoal from Wakayama has a crispy exterior while remaining tender on the inside.
