Chef Tomoki Kobayashi

The owner-chef of Kobikicho Tomoki, Tomoki Kobayashi, trained under Chef Sasaki, the former head chef of the renowned "Sushi Sasaki," which was once located in Tsukishima. Later, in 2007, he opened Kobikicho Tomoki in the Higashi-Ginza area, where he had grown accustomed to working. In 2019, Kobikicho Tomoki received a two-star rating in a renowned global gourmet guidebook. An interesting aspect of his background is that he had unique experiences as a sushi chef, including cycling through Australia, which also made him proficient in English.

Ingredients

Kobikicho Tomoki primarily sources its ingredients from the Toyoshi (Tsukiji) Market. Chef Tomoki Kobayashi has established his own unique supply network, allowing him to receive direct supplies according to the seasons. The Toyosu (Tsukiji) Market is known for its wide variety of rare seafood and high-quality ingredients, and thanks to the collaboration with fishermen and seafood industry professionals, these ingredients are delivered directly to the restaurant.

Additionally, they offer a selection of seven types of sake, all carefully chosen by Kobayashi himself after visiting the breweries, ensuring a perfect pairing with sushi. For non-alcoholic options, they recommend Okinawa's fresh acerola juice.
