Chef Motohide Nishimura

Owner-Chef Motohide Nishimura, after graduating from a university in Osaka, underwent a 7-year apprenticeship at Tokyo Kitcho, a high-end ryotei based in Osaka that embodies the ideals of its founder, Teiichi Yuki. Following this training, he returned to his hometown of Kyoto and established Gion Nishimura in 1994.
Over the course of nearly a quarter-century since its founding, through remarkable culinary skills that accentuate the quality of ingredients, Chef Nishimura has transformed Gion Nishimura into a new culinary destination in Kyoto. His dedication extends not only to ingredients but also to the choice of tableware and the dining ambiance. For more than two decades, he has been delivering artistic and delicate dishes that are simple yet accentuate the appeal of the ingredients.
The signature "saba-zushi" (mackerel sushi) is a masterpiece that reflects the chef's principles. His innovative incorporation of sushi, known for its Kyoto flavors, into the kaiseki course has become a distinctive style, born from his unwavering commitment to his craft.

Ingredients

Since its establishment in 1994, Owner-Chef Nishimura has cultivated a strong and reliable relationship with fish markets, enabling him to consistently procure top-quality fish. He frequents these markets, particularly those in the Setouchi region, ensuring a constant supply of fresh and exceptional fish like sea bream and mackerel. The skill of the chefs in handling the fish, which can alter the taste of sashimi with just a single cut, delights observant seafood enthusiasts.
At Gion Nishimura, the cuisine revolves around using Kyoto's vegetables and fresh seafood from the Seto Inland Sea, such as sea bream. The dishes vary according to the seasons, with a monthly rotation to ensure the utilization of the finest ingredients.
